How the estimate works
Raw pounds = guests × cooked portion per guest ÷ cooked yield fraction.
Allow more if guests prefer heavier portions or if the party will not have substantial sides. Cooked yield varies with trimming, bone, fat, moisture and whether meat is boneless.
Worked example
For 20 guests at 0.4 lb cooked each and 60% yield, plan about 13.3 lb raw meat before extra buffer.
Food safety first: Time estimates and temperatures of the cooking chamber never prove meat is safe. Verify food with a properly placed, accurate food thermometer and follow minimum internal temperature guidance.
