How to Choose a BBQ Thermometer

Instant-read and leave-in probe thermometer buying criteria and thermometer placement tips.

For food safety, an accurate probe thermometer is more important than the number of modes on your smoker. Start with an instant-read model that is easy to clean, readable outdoors and rated for the task.

Instant-read thermometer

This is the baseline purchase for burgers, wings, chops and a second verification when long cooks appear done. Compare response time, water resistance, calibration options and usability with gloves. Insert into the thickest part and avoid bone or fat pockets.

Leave-in temperature probe

Useful during longer brisket, shoulder and turkey cooks. Compare heat ratings for cables and probes, ability to measure smoker ambient temperatures, alarm reliability, spare probes and screen visibility. Never expose the probe cable beyond its rated limit.

How many probes?

A two-channel system may let you observe a meat probe and smoker air at the same time. Additional channels can be valuable for a crowded cooking chamber with multiple pieces of different thickness.

Plan to check a separate reading in the center of the meat before serving, even when a leave-in unit has been tracking it all day.
