How the estimate works
Estimated hours ≈ weight × cut-specific time range × (250 ÷ selected pit °F).
Low-and-slow cooking time depends heavily on shape, weather, airflow, wrapping, bone, stall, equipment and desired texture. This calculator intentionally gives a wide planning range, not a promised finishing time. The turkey estimate is especially variable: use it only to schedule extra time, never to decide doneness.
Worked example
A 10 lb brisket at 250°F gives a broad 10–17.5 hour starting estimate. Add rest and contingency before choosing when to light the smoker.
Food safety first: Time estimates and temperatures of the cooking chamber never prove meat is safe. Verify food with a properly placed, accurate food thermometer and follow minimum internal temperature guidance.
